Killer Coconut Vanilla Protein Pancakes

For when egg whites alone won’t get you through your morning…


  • 4 eggs
  • 3/4 cup almond milk (can sub regular milk or soy milk, if desired)
  • 1/2 cup coconut flour
  • 1/3 cup almond meal
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbs coconut oil at room temperature (liquid state-a few seconds in the microwave will do the job)
  • 1/4 tsp cinnamon (optional)
  • 1 dash nutmeg (optional)
  • 1 pinch pink Himalayan sea salt (pink sea salt is the best! feel free to use regular sea salt if desired)
  • 2 scoops vanilla protein powder (I am using Inner Armour Nitro Peak)



  • Mix dry ingredients first then add in wet ingredients, adding the milk last. Only add milk until desired pancake batter consistency is reached.
  • Coat pan or skillet with coconut oil or grass fed butter over medium high heat
  • Pour silver dollar sized pancakes (anything larger will be difficult to flip!)
  • Cook until golden brown, about a minute on each side


I like mine with sugar free maple syrup. Try berries, sugar free whipped cream, dark chocolate chips, or anything else you like!
